Instant Pot or Magic Pot?

Have you ever heard of an Instant Pot? Until recently I hadn’t.  This device has improved our quality of life!

I love to eat, but honestly, I don’t enjoy cooking. I’ve always been one of those people who needs a recipe to follow.  Some people are blessed with the knack of being able to throw ingredients into a pot using a pinch of this and a pinch of that.  Not me, I need step by step directions.

Being able to prepare dinner for my family is something that I have lacked in. After working all day and fighting with kids about homework, who wants to come home and cook? I often found myself saying I’ll just pick something up or have something delivered. This is an area of my life where I have been able to make small changes, which has helped me make progress towards lifting my confidence as a mother and a wife.

I recently stumbled upon an amazing new kitchen appliance, the Instant Pot. This device has transformed my attitude when it comes to cooking.  With very little effort, fewer dishes, and in less time I able to prepare dinner for my family after a long day at work and an hour in the gym!  Instant Pot Building Confidence

Instant Pot Whole Chicken Recipe

One of my favorite go to Instant Pot recipes is for a whole chicken. It comes out so juicy and flavorful and always makes for a complaint free dinner from my little guy.

First thing is the dirty work-wash and dry your chicken.

Next, season your chicken. We use garlic salt and Lawry’s seasoning salt as our main seasonings.  I think you can make it your own here by using your favorites.

Then, lightly spray the chicken with cooking oil.       

Using the saute function (wait until it says HOT), add a little oil to the pot and brown both sides of the chicken for 3-4 minutes each.

Remove your chicken from the pot, add 1 cup broth or water and scrape the browned bits off your pot.

Place chicken on trivet in your Instant Pot, breast side down.

Now for the easy part! Cook 6.3 minutes per pound and allow it to natural pressure release for at least 15 minutes.

That’s it! Super easy and so yummy!

Here’s a little tip, I use the 6 quart pot and use chickens slightly over 5 pounds, anything bigger and it doesn’t fit.

Exercise, Body Image, and Self-Esteem. Just get started!

I’m like most females; I’ve spent many years suffering from low self-esteem, ashamed of the way I looked. I decided to do something about it and joined a gym. Below are some tips on how to get started on a better you!

Making time for the gym isn’t always easy, in fact, I’ve found getting there is the hardest part. Once I’m there and the workout begins I am so glad I went.  I’m fortunate enough to have an awesome gym with trainers running classes, watching us to correct our form, and “yelling” at us to keep us motivated and moving. I like to say I have a love/hate relationship with my trainers, but seriously though, they kick my tail.

Now, I know you all aren’t fortunate enough to have a gym like mine close by, so I’m going to give you eight basic getting started pointers for now that anyone can do and come back later with specific exercises you can do to help yourself.

My first tip is show up. Put your shoes on and go.  NO EXCUSES! If you don’t have a gym close by, get you one of those workout videos, because some movement is better than no movement.

Tip two is set yourself a timeframe and stick to it. If you quit your exercise early you are only cheating on yourself.  If you decide on 45 minutes but 15 you are tired, DON’T QUIT-KEEP GOING-PUSH THROUGH IT!

Third, aim to get in four or five workouts a week; the kind that get your heart rate going and your blood pumping.  Once or twice a week is a start, but that is not enough.

Fourth, don’t think of exercise as a punishment for what you have eaten, this will lead you to dread your workouts.

Tip five, treat yourself to some cute workout clothes.  We all like to look cute, right?

The sixth tip is to drink  water, water, water. Drink water! Water is your friend. Don’t forget your water.

Tip seven is to alternate muscle groups on your workout days. Focus on one muscle group each time you workout.

Finally, don’t deprive yourself of your favorite foods, this may cause you to binge eat. Allow yourself small occasional treats. You deserve it!

Remember you didn’t come this far, only to come this far.
