Have you found that by having an Instant Pot you are getting more creative with your meals? I have! Recently I found some flank steak for a great price and thought “I bet I can make something from this in my Instant Pot!” Having never cooked with flank steak I really didn’t know where I would be going with this meal. After looking up several recipes I decided to give Mongolian Beef a try. Below is my twist on how I made it and it has become a favorite in our house now!

First I cut the flank steak into approximately 1 inch wide strips and then cut those long strips into shorter strips, again approximately 1 inch in length.
Then I make a marinade by seasoning the flank steak with salt, pepper, a few pinches of brown sugar and a few shakes of soy sauce.
When I’m ready to cook I use the saute function and wait for my Instant Pot to heat up. Once warm I add a little bit of oil to coat the bottom of the pot. Then I sear each strip of meat for 3-4 minutes per side. This needs to be done in batches, don’t try to cram all the flank steak in there.
Once all my flank steak has been seared and removed from my Instant Pot I add some of the water to the Instant Pot and use a wooden spatula to scrape all the browned bits off the bottom of the Instant Pot. Don’t worry, it comes up very easily.

Now I’m ready to cook! Add your seared flank steak, water, soy sauce, and brown sugar to the Instant Pot and set it for 12 minutes manual. After the Instant Pot beeps to let you know the 12 minutes is up, do a quick release (be careful) and you are ready to eat!
When I make this Mongolian Dish I do not thicken the sauce as I have seen many other people do, we like it just the way it is. This is one of the few dishes where I use quick release, the flank steak does not get dried out like many other meats do when using quick release.
