Quick and Easy Instant Pot Lasagna Soup
Craving lasagna? This cool weather makes lasagna the perfect comfort food! This lasagna soup is a great spin on a classic lasagna, only it is easier and has fewer dishes, making clean up time that much better!
I recently saw an Instant Pot recipe for lasagna using a springform pan and it looked simple enough. I’ll have to say the lasagna came out delicious, just as the recipe had promised. But there were two problems, I had to line the pan with foil to keep all the yummy sauce in the pan, and afterwards, I had the extra dishes to wash. No one likes extra dishes.
So today, I give you a quick and easy Instant Pot lasagna soup that will be sure to please even the pickiest of eaters in your house!
Lasagna Soup Ingredients
1 pound cooked ground beef
8-10 uncooked lasagna noodle
24 ounces of your favorite tomato sauce
2 cups of chicken broth
1 cup Parmesan cheese
1 cup Mozzarella cheese
Lasagna Soup Directions
Mix the tomato sauce and chicken broth in your inner pot liner.
Add the beef and give it a stir.
Add salt, pepper, and Italian Seasoning to season to your preference. I used a few shakes of the salt and pepper and 1/4 tbs of the Italian Seasoning.
Break your uncooked noodles into thirds and layer them into the sauce mix. Depending on how you layer them you should be able to fit from 8-10 noodles into the soup mix.
Gently push down onto the noodles so they are submerged underneath all the yummy sauce.
That’s it! I told you it was easy!
Close lid and set Instant Pot at 5 minutes manual.
After the 5 minutes are up, carefully do a quick release.
Add in your Parmesan and Mozzarella cheese.
Give it a good stir and you are ready to enjoy this quick and easy Instant Pot Lasagna!
Here’s a little tip, I used the 6 quart pot and this meal fed 4 adults.
